1 cup pitted dates
1 cup sliced almonds
1 cup cashew nuts
1/2 cup coconut oil
3 cups cashew nuts
1/2 cup almond milk
11/2 cups dark chocolate
1 cup fresh orange juice
1 cup fresh blueberries
Method of cookery
1- Add the crust ingredients to a food processor and process for a minute until the texture is like breadcrumbs.
Spoon the mixture into a medium sized cake dish.
2- Add the cheesecake center ingredients to the food processor and process into a creamy texture.
spoon the mixture on top of the crust mixture and place in the fridge.
3- Using a small saucepan add the chocolate, orange juice and blueberries and bring to boil. Once boiled turn down low and stir until the mixture becomes a sauce. Pour the sauce over the creamy texture covering the cake fully then place the whole cake in the fridge and leave for a couple of hours until the cheesecake cools and sets.
