Ingredients
3 peeled washed chopped beetroots
1 tablespoon curry powder
4 cloves crushed garlic
1 teaspoon tumeric
5 x chilli peppers chopped
3 x green onion chopped
1 large potato peeled and chopped
1 sweet potato peeled and chopped
1 tablespoon miso paste
1 cup washed black beans
1/2 cup red lentils
pinch Himalayan salt
1 cup spinach
1 tablespoon sea vegetable flakes
1 cup chopped corriander
1 tablespoon olive oil
10 cups cold water
Method of cooking
1- In a large soup pan add the olive oil and turn up the heat.
2- Add the beetroot, chilli peppers, green onion, potato, sweet potato, black beans, lentils, spinach, coriander, curry powder, turmeric, garlic, sea vegetables and salt. Stir-fry until ingredients brown and soften slightly.
3- Add the water and miso and bring to boil. Once boiled turn down the heat and simmer for around 45 minutes to 1 hr.
