Vegan chocolate orange blueberry cheesecake

Most of us have sweet tooth's.  When choosing sweets it is important that we choose the right recipes that are healthy for us.  This vegan cheesecake recipe is dairy free and packed with healthy ingredients.  There are still a few calories in this cheesecake so be careful to control your portion size and have a small piece 1x daily.

Ingrdients

crust
1 cup pitted dates
1 cup sliced almonds
1 cup cashew nuts
1/2 cup coconut oil

cheesecake center
3 cups cashew nuts
1 banana
1/2 cup almond milk

topping
11/2 cups dark chocolate
1 cup fresh orange juice
1 cup fresh blueberries

Method of cookery
1-
Add the crust ingredients to a food processor and process for a minute until the texture is like breadcrumbs.
Spoon the mixture into a medium sized cake dish.

2- Add the cheesecake center ingredients to the food processor and process into a creamy texture.
spoon the mixture on top of the crust mixture and place in the fridge.

3- Using a small saucepan add the chocolate, orange juice and blueberries and bring to boil.  Once boiled turn down low and stir until the mixture becomes a sauce.  Pour the sauce over the creamy texture covering the cake fully then place the whole cake in the fridge and leave for a couple of hours until the cheesecake cools and sets.

1/2 apple peeled cored and chopped
1/2 cucumber peeled and chopped
watermelon halved and scoop out 2 cups melon flesh.
2 cups cold water.
Make enough for 3-4 cups

Preperation

1-
throw the above ingredients in a blender and blend into a smooth liquid.
